Lemon & Berry No Bake Tart

This is an easy recipe that will sweeten & delight your tastebuds without the adding any sugar.
The brilliant part about this recipe is that it is filling. After one serving, you won't be thinking you need another 1 or 2 pieces to satisfy that sweet craving. Rather, you'll feel content and hopefully have really enjoyed the lemon zing against the flavour of the berries and crunch of the crust.
The coconut oil ingredient has many benefits of which you can read about here. In particular, it curbs sugar cravings and stabilises your blood sugar levels ~ well known as 'mother natures elixir'.
(Having no added sugar in your diet allows for weight loss, less peaks & troughs in your hunger and craving pangs and far more satisfaction when finishing a meal.)
Here's what's in the tart & how to make it:
Base
- 3/4c activated cashews*
- 1TBS organic coconut oil
- 1c shredded coconut (unsweetened)
- 4TBS freshly squeezed lemon juice
- 1/4tsp stevia powder
Place all ingredients into the blender and mix until well combined and the cashews have been chopped well. Add water if mixture is too dry.
Press into a lined spring tin and place in the freezer for 2-3 hours to set.
Top
- 3/4c activated cashews or macadamia nuts*
- 1/2c organic coconut oil
- Juice of 2 limes
- Juice of 2 oranges
- 3TBS coconut cream
- 2 tsp vanilla extract
Place all ingredients in the blender and mix well. Again, if need be you can add a little water to adjust the consistency if too dry.
Spread the mixture on top of the frozen base & place back into the freezer to set for approximately 2hrs, or until needed.
This recipe can be prepared days ahead.
Serve with a topping of berries.
* To activate your own nuts (far cheaper than buying them activated), simply soak the nuts overnight. Drain the water and then rinse.
