Apricot Balls & Cacao Balls
I'm quite partial to the no-bake ball variety of treats. They are quick, easy, healthy - and easy to get to when you're after a tasty treat without blowing the calorie counter.
Here are 2 recipes that will delight your tastebuds.
Cacao Balls, Apricot Balls
- 3 TBS coconut milk
- 8 dried apricots
- 2 TBS coconut oil
- 1/2c cashew nuts
- 1 TBS chia seeds
- 1 TBS cacao nibs
- 2 tsp vanilla essence
- 1 tsp cinnamon
- unsweetened coconut for rolling the balls into
Place all ingredients in the blender & wizz until chopped & blended. Shape into bite sized balls with your hands, then roll into the coconut. Place the balls into the fridge or freezer and serve when ready.
What I do: keep them in the freezer over the span of the week & eat straight from there. I love a handful of frozen berries with them too.
Tip: if the mixture is too runny to make into balls, add a couple more dried apricots & / or a few additional cashews.
If you like it sweeter, add 2 tsp raw honey (this will increase the sugar content).
Place all the ingredients into the blender. If the dates are too hard, you can always soak them in boiling water for 5 minutes prior to placing them into the blender. (Just make sure you discard the water before putting the dates into the blender.
Blend until all the ingredients are chopped and mixed together. Shape into bite-sized balls and roll in the coconut. Place into the fridge or freezer until set.
